Cannellini Beans and Kale Soup

Serves 4-6


This soup is great any time, but it is especially a "make you feel good" soup on a rainy, cool, or winter day. One of our favorites!



1 quart organic, free-range chicken broth

4 links chicken sausage (spicy) sliced

1/2 red onion, chopped

salt and pepper to taste

2 cans organic cannellini beans, can sub with (navy, white or great northern. Do not drain.

3 cups of organic Kale ( remove stems) chopped

1 Tablespoon of organic butter

1 tsp Red pepper flakes



Directions:


1. In a large pot pour in chicken bone broth, add sliced chicken sausage, heat over medium heat for about 10 min. Add onion, salt and pepper and cook an additional 10 min.

2. Add beans, do not drain, bring to a boil.

3. Add Kale, reduce heat to simmer, stir occasionally. About 10 min.

4. Uncover, add red pepper flakes, salt and pepper to taste.


Serve hot with a side of cornbread. Enjoy!
