Feeds 4-6 people
Ingredients:
4 tablespoons coconut oil
1 pound ground beef or bison
1 red onion, diced
2 small jalapeños, stem removed, diced (seeds removed, optional)
4 tablespoons sour cream
2 teaspoon oregano
Sea salt and pepper, to taste
6-8 large chicken or duck eggs, fried or scrambled
6-8 almond flour tortillas
2-4 tomatoes, diced
2 avocados, pitted and diced
Fresh cilantro, chopped
Directions:
1) In a large skillet over medium heat, add the coconut oil and ground beef or bison, stirring occasionally until the meat is browned.
2) Add onion, jalapeño, sour cream, oregano, salt and pepper, stirring until the onion becomes translucent.
Remove from the heat.
3) In a separate pan over medium-low heat, cook the eggs as desired.
4) Serve on the tortillas and top with the tomato, avocado and cilantro.
